Quick Chicken Noodle Soup
Ingredients:
1 1/2 teaspoons butter
1 1/2 teaspoons olive or vegetable oil
1 cup sliced celery
1/2 cup chopped onion
1 cup frozen sliced carrots
1 Polly's Poultry Blend simmering sachet
5 3/4 cups diced cooked chicken (store bought rotisserie chicken works well for this)
Directions:
1. Melt butter and oil over medium high heat.
2. Add celery and onion. Saute for 5 - 10 minutes until onion becomes tender and slightly pale and golden. Turn down the heat if the vegetables begin to brown.
3. Add the broth, chicken bouillon, carrots, cooked chicken, and simmering sachet.
4. Bring mixture to a boil. Reduce heat and simmer for at least 15 minutes. Simmer for a longer time if desired. Flavors will intensify,
5. Add the egg noodles 11-15 minutes before serving.
Quick Italian Beef Sandwiches
Ingredients:
5 teaspoons au jus mix powder
3 cups water
4 garlic cloves, minced
1/8 teaspoon ground black pepper
1 Italian Herb simmering sachet
1 pounds deli roast beef sliced thin
1/4 pound provolone, sliced
4 large hoagie rolls
1 cup sliced pepperoncini peppers
giardiniera if desired
bell pepper, sauted, if desired
Directions:
1. Combine the water, au jus mix, and garlic in a medium sauce pan. Add the Italian herb simmering sachet. Add a bit of pepperoncini juice, if desired, for a bit of a kick. Bring to a boil over high heat. Reduce heat and simmer on low heat for 30 minutes.
2. Add the roast beef and heat through, about 3 minutes. Divide the roast beef evenly among the rolls. Top with the cheese and pepperoncini and any additional toppings of your choice if desired.
